* Smoother than Grandmas: Preparing a Cake for Decoration
Using a cake that has been pre-baked by the student, techniques for torting, filling, and frosting a cake will
be taught and practiced in this two-hour class. Simple piping techniques will also be taught.
* Not the F-Word: Working with Fondant
Just how do cake decorators do all those neat designs on a cake? Well, first they start off with a good work
surface. Artists have blank canvases; cake decorators have fondant. Students will spend two hours
learning how to cover styrofoam dummies for use for competition work, as well as covering real cakes that
they have pre-baked. Coloring fondant will also be addressed. Techniques for what can be done once the
fondant has been put in place will be discussed as time permits.
* It's a Jungle Out There: Fondant/Gumpaste Animals
Want to learn how to make a colorful, cute animal? Just about all of modelling starts out with one basic
characteristic. Take this two-hour class to find out the secret, as well as make three to five animals in
varying colors.
* Even a Caveman Can Do It: Easy-Filled Chocolates
Students will learn in this two-hour class how to prepare molds, fill, and decorate prior to assembling so that
they can be given away.

* Palatteable Art: How to Hand-Paint Chocolates
Painting chocolate molds by hand is not a hard task to do; however, with the right basic foundations, anyone
can soar in this arena. In just two-hours, students will learn how to properly paint lollipop molds, pour, and
bag for presentation. As time permits, students will also learn about
* Are Those Real??? 3-D Chocolates
There are so many 3-dimensional molds on the market that this class can be tailored to any season, event,
or holiday. In just two-hours, you can make a well-decorated item in chocolate that can be used as a center-
piece for a cake, as a side item, or all by itself.
* Taking a Bath: Dipped Chocolates
Ever wonder how the mall stores do it? In this two-hour class, all sorts of sweet, sour, & salty items will be
used to dip into chocolate. Ideas and discussions about holiday adaptations, along with packaging for all of
the various methods used, will also be done.
* A Garden Variety: Gumpaste Flowers
Want to learn how to make beautiful sugar flowers that look like they're real?! Class times vary based upon
the flower(s) to be taught. Learn one or more in a single setting including: Alstromeria, Arum Lily, Calla Lily,
Carnation, Cherry Blossom, Daisy, Dogwood, Fuschia, Gardenia, Hydrangea, Ixora, Lily of the Valley, Pansy,
Peony, Petunia, Poinsettia, Rose, Stephanotis, Sunflower, Sweet Pea, Violet
* Wedding Favors: Celebrating Love in Chocolates
Not only the bride should be treated right! Don't forget the guests! This two-hour class will find the student
making various types of poured chocolate boxes, using a variety of items to decorate the boxes, and
preparing them for being given away to the wedding guests.
* To Grandmother's House We Go: Holiday Chocolate-Filled Sleigh
Students will learn how to paint, pour, and assemble a decorative 3-dimensional sleigh that looks like a piece
of fine Lenox. Filled chocolates containing centers of holiday goodness will also be made and wrapped to
resemble presents filling the sleigh.
* Make It Work: Fashion Cookies & Chocolates for the Runway
Learn how to use chocolate transfers to create works of art that will blow the judges away on the red carpet.
This two to four hour class (depending on how detailed the class is organized) can be taught using the
method on chocolates or applying the chocolates to cookies. Packaging for presentation will also be
done and discussed.
* Gingerbread Houses: They're Not Just for Christmas Anymore
The smell of gingerbread no longer has to wait until late fall/early winter. Learn how to make a gingerbread
house for any particular season or holiday event. Three or more hours is needed depending upon the intricacy
of the desired house to make.
